docs: update version to 0.73.1 #4290

Refs #4288, #4284. Ports the latest tooling commit to the guide. Updates the installer logic to make use of the new cargo-dist installer scripts, so that macOS instructions are copy/pasteable in the guide (#4255) and use .tar.gz for archive format (#4256). I opted to leave the pd instructions largely as they are.

Also bumps the project Cargo.toml files to use a new version, 0.74.0-alpha.1. The main branch has diverged significantly from the public testnet, so I'm bumping the version on main to denote that its code represents an as-yet-unreleased version, 0.74.0. There's no tag here, so it won't trigger a release workflow. It's just to update log messages and make it easier to reason about versions across the SDLC.
