docs: Fix gpio_dump_io_configuration typo in docs (IDFGH-14235)

Description

As far as I can tell, the gpio_dump_all_io_configuration function mentioned in the documentation doesn't exist (grep -r gpio_dump_all_io_configuration gives only this mention in the documentation, no implementation or declaration). This PR changes the documentation to use gpio_dump_io_configuration, the function that was intended.

Testing

Tested that the corrected code works as expected using an almost-empty project and https://github.com/mirrexagon/nixpkgs-esp-dev (via Nix), on an ESP32-S3.
