The old workflow didn't sort the tags which caused it to fail for 5.10 (5.1, 5.10, 5.2, 5.3, etc) -- see https://github.com/catalystneuro/roiextractors/actions/runs/11709526698.
This workflow is basically over-engineered -- taking me way more time to fix/debug it than it would to just update the version manually. Plus then I can update the changelog at the same time.
