Pin Scivision version in gallery examples

• To stop breakages after future updates (the will be a schema change after 0.7)
• Make a new Scivision release if necessary (done: 0.7.0)
• For each notebook in https://github.com/scivision-gallery:
  • It should have an environment.yml file already
  • This should refer to a pinned version of Scivision, ideally a PyPI version (scivision == 0.7.0)
• Any other environment information updated too (check environment_full.yml)

Now done. Most of the examples still do not work or fail CI. The above changes do not address this, they just change the installed version from latest main to a pinned version from PyPI.
