Now we always use the latest stable release, except for the 1.9 tests.

The nightly failure is real, I'm guessing we need to merge this: JuliaConcurrent/UnsafeAtomics.jl#14 |

I also noticed that our codecov hasn't been updated for a couple years: https://app.codecov.io/gh/JuliaParallel/Dagger.jl/commits
Now that codecov doesn't allow tokenless uploading anymore I think we have to set up the
SECRET_CODECOV_TOKENas described here: https://github.com/JuliaGPU/buildkite?tab=readme-ov-file#using-secrets(an admin will need to do that since I don't have access to the token)
