I use dark mode for editing, but I don't want the PDF to use that theme. If I switch to light theme first before printing to PDF, I can get the result I want, but it would be nice not to need to do that.

Having a similar problem, perhaps related to this?
When I try to export with "retain formatting", which is the only mode that seems to work for rendering embedded latex correctly, sometimes the page background is filled in black, sometimes it's white, however, the text is always light grey. Ideally, it would export with black text and white pages.
