Is your feature request related to a problem? Please describe.

Rancher Projects support adding Resource Quotas scoped to specific projects; currently, these are not shown within the dashboards deployed in the Project Monitoring Stacks.

Describe the solution you'd like

A dashboard should be added to rancher-project-monitoring that conveys important informations to users on how much of their configured resource quotas have been used up already.

Additional context

Need additional clarity on what exactly these dashboards should contain for a minimum MVP
