Would be good to update or remove old documentation at https://pangeo-data.github.io/pangeo-stacks/images.html

My preference would be to just point to this repository on the pangeo website so that documentation is centralized. So far it's been easier to just have markdown files rather than host a separate webpage / read-the-docs.
