Not using proper tests for Parser #18

What happened?

Currently the parser test is very manual intellij provides a good test framework for parsing - https://plugins.jetbrains.com/docs/intellij/parsing-test.html but it uses Junit3

What did you want to happen?

We should be using the intellij framework and either find a way to make it work with junit5 or use junit3 for this project
