MPF on NixOS?

Has anyone attempted to set up Mission Pinball on NixOS? I've been hearing a lot about it lately, and it seems like it would be really well suited for installing in a pinball machine. It'd be really cool to define a game's OS with a single file. A huge challenge with NixOS though is that you can't install packages via pip in python like you would in a normal way. They tend to have prebuilt definitions for installing python packages.

I've downloaded a copy of Nix and span up a VM to host it, I'll try to document any findings, however I'm about to travel for a while so it'll probably get low prioritized quickly.
