Metadata for targets expired

Hi there,

I'm seeing errors for some repositories created around 3 years ago throwing "Metadata for targets expired"

I can't find any docs on how to update the keys/metadata etc to continue using the repositories. I still have the root key, kept secure, but how do I update notary to continue to use the repo, or do I have to delete it from the DB completely and recreate it?

@jonnystoten, it was suggested by Justin Cormack to tag you on a GitHub issue regarding this since you're doing most of the v1 maintenance. Do you think we can get a hand here?
