03: fix explanation of capture-avoiding substitution #147

As pointed out by Kayla Thomas [1], the paragraph on capture-avoiding substitution used an example that didn't actually demonstrate capture-avoiding substitution.

While I was at it, I also made the explanation a bit more explicit.

This looks good to me from reading it twice and trying to follow it. I'll wait to see if anyone who's an expert on metaprogramming has a comment (besides you who obviously are) just in case I missed something, but otherwise if not this seems good to go. Appreciated!
