I've started creating sysexts for Fedora CoreOS in https://github.com/travier/fedora-sysexts. If folks have ideas for tools or applications commonly needed and that could be added to Fedora CoreOS this way then this could make a good showcase.

This one could also be about splitting the container runtimes from Fedora CoreOS into sysexts

Another idea is to create a "man pages" sysext with all the documentation that we don't normally include in Fedora CoreOS but can add in a sysext.
