Adjust demo notebook for easier execution

The current demo notebook execution can last hours to download the HLS tiles and train the model. Since the purpose of the notebook is to give a proof of concept of InstaGeo, we can use a subset of the original data for faster execution.
Some adjustments, not limited to the source of the data in the description, or dataset size will also be considered in the scope of this issue.
