Relates to icenet-ai/icenet-roadmap#47.

This is the start of a journey looking at using the existing IceNetDataSet for other backend model libraries, in this case, PyTorch.

Will make it easier to plug and play different model architectures using different libraries, without having to worry about data loading/processing.
