Sweat chopped leek in dry curry with the oil. Hit mixture with white wine and let reduce to 3/4 the amount. De glaze pan with the heavy cream and vanilla and bring to a simmer. Add oysters to hot soup and cook until desired doneness. Garnish with a little of the curry.
NOTES
I subsituted real crab meat and it was insane. Only add to soup, do not boil the crap. It gets too pulvarized.
