Replay tags: Flutter

Description

#4639 has introduced tags based on options:

However, as discussed on the call on the Dec' 17th 2024, this doesn't work for Flutter, which doesn't use native masking. Therefore, any masking-specific values that are shown for Flutter apps are incorrect (native defaults).

Instead of adding these by default, we need to be able to set tags from the Flutter SDK (via a new API) and change/remove any tags automatically created by the native code. This is related to being able to set native & flutter SDK name & version, but it's not limited to these values.
