Based on BA's maple roasted carrots
Preheat oven to 400 F.
Line a rimmed baking sheet with 3 sheets of foil.
- 2 pounds medium carrots, scrubbed, cut into 3" pieces on a diagonal
Spread out carrots on foil.
Season with:
- 6 tablespoons unsalted butter, cut into pieces
- 1/3 cup (packed) light brown sugar
- 1/3 cup pure maple syrup
- 3/4 teaspoon crushed red pepper flakes
- Kosher salt
Bake, tossing every 20 minutes, until tender and browned around the edges, 50–60 minutes.
