Shrimp fajitas

Fajita seasoning blend

  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon cumin, ground
  • 1/2 teaspoon coriander, ground
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper

Garlic butter

Melt over low heat in a small saucepan until fragrant and foaming (2-3 minutes):

  • 4 tablespoons salted butter
  • Zest of a lime
  • 1 clove garlic, minced
  • 1-2 tablespoons dry white wine

Set aside, and keep warm.

Shrimp

Toss together to coat, and marinate in the refrigerator for 30 minutes:

  • 1.5 pounds shrimp, peeled & deveined
  • 1 tablspoon fajita seasoning blend
  • 1 tablespoon adobo sauce
  • 2 cloves garlic, minced
  • Zest of a lime
  • Juice of half a lime
  • Kosher salt
  • Black pepper

In a large pan over preheated over medium heat, cook almost all the way through on the first side:

  • Marinated shrimp
  • 2 tablespoons olive oil

Flip, and cook through.

Garnish:

  • A sprinkle of parsley or cilantro, chopped

Serve immediately with:

  • Garlic butter
  • Flour tortillas
  • Guacamole
  • Sour cream
  • Charred peppers and onions
