In a small bowl, combine:
- 1 cup packed parsley leaves (or any mixture of parsley, cilantro, mint, and/or sage), finely chopped
- 1 garlic clove, minced (or horseradish, or shallot)
- 1 teaspoon finely grated lemon zest
- 1/2 cup olive oil (optional)
- 2 tablespoons lemon juice (optional)
Optionally, add any one of:
- 1 anchovy, minced
- 2 tablespoons pine nuts, toasted
- 1/3 cup Pecorino Romano cheese, finely grated
Season:
- Kosher salt
- Black pepper
