In the bowl of an electric mixer fitted with a whisk, whip until smooth:
- 12 ounces cream cheese, at room temperature
With the mixer on low, slowly add the following, whisking until firm:
- 1 cup heavy cream
- Grated zest of 1 lemon
- 1 tablespoon freshly squeezed lemon juice
- 3 tablespoons minced scallions, white and green parts (2 scallions)
- 2 tablespoons minced fresh dill
- 1 tablespoon minced fresh chives
- Kosher salt and freshly ground black pepper
Wrap the mixture in cheesecloth, suspended over a bowl using a strainer, cover with plastic wrap, and allow to refridgerate overnight.
Discard liquid in the bowl and serve chilled with:
- Crackers
