Add new project to showcase.json

This PR adds a new project to the showcase.

• Project name: Linkpin
• Description: Linkpin is a minimal bookmark manager on the Internet Computer.
• Updated showcase.json with project details.
• Added logo and screenshot images under /static/img/showcase.

I made a few updates. In general, we suggest that you do not list a stat unless it is a significant number. Also, we usually showcase established products that have shown product market fit over time.

We can still list the product on the page. We just won't be featured like the projects that take full width.
