Metadata: Zap counter stats

We need to add zap counts to note metadata

Assumptions:

• Zap has been validated before it has been added to the db. nostrdb will not do zap validation due to the networking requirements.

Things to note:

• bolt11 parsing isn't working on windows due to the non-portability of many of its dependencies (tal, etc). We will need to rely on the amount tag instead of parsing the bolt11, at least as a fallback on windows systems.
