Explore usage of guix

Guix (https://guix.gnu.org/) provides a strong package manager tailored for reproductibility.
It seems an interesting alternative to conda, and gives a clean way to rebuild old images.
The main bottleneck is that packages need to be created, as we do with conda. It would be interesting to look at how difficult it may be (or not!).
