Here is a collated list (so far) or what we want to get out of further runs of the pipeline experiment for future analysis:

OCR full output: so we can swap out models and then re-run the pipeline from the translator step.
Softmax: the 'most naive' first guess approach, simple to extract and maybe useful?

Further additions found in comments below. Todos:

Decide on when this is a complete list of what we want.
Implement and run further experiments.
