An empty preference field means that Tesseract will use the English language, but there has been a case where the string "undefined" was saved as a preference - which caused an error on the next execution.
I think we should set 'eng' as an explicit default, and overwrite any occurrence of 'undefined'.

1a34d94 should do the trick.
#85 was a new motivation for this fix.
