Since Conda now uses the libmamba solver for the dependency tree there is now little reason to keep using Mamba instead of Conda, especially in a teaching setting such as ours.

Remove the now unused GHA workflow for testing Conda environments in the "slim" Docker image. This was a remnant of the pre-WSL2 era of Windows when Docker was still used as a fail-safe installation. Since we now require students to use the WSL2 this GHA is no longer necessary.
Do not run the Conda environment test on MacOS ARM64, as the `subread` package is not available there.
