Lonboard makes it easy and fast to plot the results of a STAC query. This ticket is to create a notebook similar to
https://github.com/MAAP-Project/maap-documentation-examples/blob/main/stac_spatial_coverage/notebooks/plot_items.ipynb
to demonstrate this capability.

Acceptance criteria:

notebook in this repo is published to veda-docs.nasa-impact.github.io which demonstrates how to visualize STAC items using lonboard.
