Update install.sh to support AlmaLinux and Ubuntu

hostnamectl | grep "Operating System" | awk '{print $3}' <-- seems to work on both Almalinux and Ubuntu, so the script could use that to work out what commands to run.

Also update the README to say that 8GB RAM is required for K8S.
