XOnlyPubKey needs to be documented in the Simplicity Tech Report #51

The tech report wasn't updated when the code was migrated to the new x-only pubkey style of BIP-schnorr.

Care needs to be taken when updating the tech report as the Elements data may still need the full pubkey coordinate datatype.
